The Ventresca is a piece that is located in the belly of tuna and hence its name. It is one of the richest parts of the fish, that being an oily fish containing Omega-3, which is good for lowering cholesterol.
Chestnut with Iberian ham pâté (El Monumento) elaborated in Castaño del Robledo (Huelva, Andalusia).
Ingredients: chestnuts, meat stock, onion, celery, mushrooms, Iberian ham, extra virgin olive oil, wine, pepper and salt.
