The organic farming certification guarantees that the olive grove has been cultivated without synthetic pesticides, chemical herbicides, artificial fertilisers or genetically modified organisms. The process is overseen by an independent certification body that audits both the grove and the mill. In the case of Antojo del Sur, this implies a total commitment to the natural environment of the Andalusian olive grove.
Unfiltered oil retains small olive particles in suspension that contribute a fruitier, more intense and fresher flavour. Over time these particles settle naturally to the bottom of the bottle, which is a sign of a living oil, free from manipulation. Gently swirl the bottle if the oil has been resting for a while to reintegrate the sediment before use.
Hojiblanca is an extremely versatile variety: it is excellent raw for salads, toasts and finishing dishes (where its freshness and notes of green grass and almond shine), but it also withstands frying and sautéing temperatures perfectly thanks to its stability. It is perhaps the most balanced variety across the entire Mediterranean range.
As an extra virgin olive oil, the maximum acidity is by law below 0.8%, although in high-quality productions such as Antojo del Sur the typical values are considerably lower, indicating healthy olives processed quickly after harvesting. Check the label of each harvest for the exact analytical data, which is usually included as a quality guarantee.
Extra virgin olive oil is sensitive to light, heat and oxygen. Always keep it in a dark, cool place, away from heat sources such as the hob or a sunny window. Once the bottle is opened, consume it within 1–2 months to enjoy it at its best. Dark glass bottles or tin cans are the best containers for preserving its qualities.
