All our products carry their official seal in compliance with Royal Decree 4/2014: black seal for 100% Iberian Bellota, red for Iberian Bellota and green for Iberian cebo de campo.
We do not work with intensive farming. Our pigs are raised free-range in the oak dehesas, feeding on acorns during the montanera season. This natural process is what gives Iberian Bellota ham its characteristic aroma, its melt-in-the-mouth texture and that unmistakable flavour that makes it one of the most prized products in world gastronomy.

We offer our Iberian hams and shoulders in four formats: whole legs for those who enjoy the tradition of having a ham at home, hand-carved in the artisanal style passed down through generations in the sierra, machine-sliced into perfectly thin slices ready to serve, and in chunks and blocks so you can slice it yourself at home however you prefer.
In our Seville shop, we carve by hand, as it should be done. Every slice is treated with the respect that a product of this calibre deserves. And if you order online, we prepare and vacuum-seal it so it reaches your home with all its flavour and aroma intact.

The Sierra de Aracena is the heart of Iberian ham. Its dehesas, its climate and its centuries-old tradition make this region the perfect place for raising Iberian pigs and curing ham. Every piece we offer has been selected by us at origin, personally visiting the curing houses we have been working with for over 20 years.

The 100% ibérico de bellota ham (black label) comes from 100% Iberian-breed pigs raised freely in the dehesa woodland and fed exclusively on acorns and wild herbs during the montanera season. The ibérico de cebo de campo (green label) corresponds to pigs with at least 50% Iberian heritage that graze in open pastures and are supplemented with natural feed. The difference in flavour and fat infiltration is remarkable: bellota offers a silkier texture and a far more complex aroma.
All our ibérico de bellota hams undergo a minimum curing process of 36 months, reaching in many cases 48 months or more depending on the weight of the piece. This long maturation period in the natural cellars of the Sierra de Aracena is what develops the deep flavours and the characteristic texture that make them unique in the world.
We work exclusively with producers from the Sierra de Aracena y Picos de Aroche, a region declared a UNESCO Biosphere Reserve. Our suppliers are located in towns such as Jabugo, Cumbres Mayores and Cortegana, where the tradition of ham-curing has been refined over centuries. We do not work with intensive livestock farming: all animals are raised free-range in the dehesa.
We offer our hams and paletas in several presentations to suit every need: whole leg with bone, hand-carved slices (artisanal knife cut), machine-sliced vacuum-packed pouches, and cubes or sticks for cooking. If you do not have a ham stand at home, we recommend the hand-carved option, which preserves all the flavour and aroma of a professional cut.
If you have a whole piece, cover the cut surface with its own fat and a clean cotton cloth to prevent it from drying out. Keep it in a cool, dry place away from direct light. If you have purchased vacuum-sliced ham, once opened consume it within 24–48 hours, keeping it refrigerated. To enjoy it at its best, take the slices out a few minutes before eating so they come to room temperature and release all their aromas.
