Frequently asked questions

We offer a very special selection of wild mushrooms from the Sierra de Aracena preserved at their optimal point: Amanita Caesarea (the Caesar's mushroom, one of the most prized fungi in the world), Boletus edulis, Níscalos (saffron milk caps) and Gurumelos, an indigenous mushroom highly appreciated in Huelva and Extremadura. All are sustainably harvested and prepared using traditional methods.

Tagarninas are the tender shoots of the wild cardoon (cardillo), a plant very popular in the cuisine of the Sierra and Cádiz region, hand-picked in the countryside. Espárragos trigueros are wild asparagus — thinner and more intense than cultivated ones. Both preserves are a treasure of the Andalusian larder, ideal for omelettes, scrambled eggs and traditional stews.

We work with superior-quality tuna preserves, including ventresca (the juiciest part of the tuna belly), red tuna, pickled mussels and small sardines. All our fish conserves are produced artisanally, respecting the timings and traditional methods that guarantee exceptional texture and flavour.

Yes, we stock organic sauces and olive preserves made with certified organic farming ingredients. For those seeking products free from pesticides and with the lowest possible environmental impact, these preserves are the ideal choice without sacrificing the authentic flavour of the Sierra.

Preserves have a long shelf life thanks to traditional sterilisation methods, generally between 2 and 5 years depending on the product. Once the container is opened, they must be kept refrigerated and consumed within the following days. We always recommend checking the best-before date indicated on each product.
