If you are choosing between jamón and paleta, start with a practical question: how will you eat it at home? A whole piece to carve regularly is a different purchase from packs you open occasionally. Then compare each product’s designation, weight and format.
The difference between jamón and paleta
Jamón comes from a pig’s hind legs, while paleta comes from the front legs. This anatomical difference affects the size, bone shape and carving. Paleta is usually smaller; jamón gives you a larger piece. They are different products, and choosing one over the other does not, in itself, determine quality.
Curing times can also vary according to the size and characteristics of each piece. Check the individual product information instead of assuming all hams or shoulders are cured for the same number of months.

The price of the piece and what you will serve
The weight of a whole piece includes the bone, rind and parts removed during carving. It is not the same as the weight of the slices that reach your plate. In a sliced pack, the net weight refers to the product inside.
When comparing a whole piece with a sliced set, check what each option includes. Look at the net weight of the packs and whether the carving service is included. Do not assume a fixed yield: the usable amount depends on the piece and how it is carved.
When to choose a whole piece
A whole piece can be a good fit if you enjoy carving and will eat it regularly. Before buying, think about where you will keep it and who will carve it. Paleta generally offers a smaller format; jamón may appeal if you want a larger piece.

When to choose sliced jamón or paleta
Sliced packs are practical if you do not have a ham stand, prefer not to carve or want to spread your servings across several occasions. They also let you try both products without buying two whole pieces.
Two options to start with are the 100 g hand-carved acorn-fed Ibérico ham and the sliced 100% Ibérico acorn-fed shoulder. Arrange a small tasting with both, try each on its own first and choose according to your taste. The name of the cut is no substitute for your own preference.

Is paleta just a small jamón?
No. They come from different legs of the animal. Paleta is neither a smaller ham nor an inferior grade of ham.
Which should I choose for a small household?
Alongside the size of the piece, think about how often you will eat it. If you only want occasional servings, compare sliced formats and the contents of each pack.
Can I compare just the price per kilogram?
It is useful when comparing equivalent products. A bone-in piece and a sliced pack are different formats: check the net weight, designation and included services before deciding.
How should I store it?
Follow the label on the product you receive, both before and after opening. Storage instructions for a whole piece and a sliced pack are not interchangeable.
